잔을 손끝으로 돌려 향을 풀면 옥수수의 달큰함이 가장 먼저 코를 가득 채운다. 이어 오크의 탄내와 옅은 체리가 뚜렷한 층을 이루며 겹친다. 한 모금 머금으면 캐러멜이 혀를 덮고 계피와 후추가 뒤에서 올라온다. 삼키면 마른 오크가 목 안쪽에 길게 걸려 천천히 사라진다. 켄터키 숙성고의 큰 온도차가 통 안에서 만든 두께가 느껴진다.
