Becomes extremely coastal, all on sea air, oysters, fisherman’s nets and sea water (or even brine). With water: ‘a walk on the beach along the ocean at 8am, with your Irish setter’. Forget about that
restaurant Palate
very creamy, rich, with an oily mouth feel. Touches of fructose on pepper, ginger, salt (anchovies), kippers and lemon. Lemon drops. With water: a little more vanilla and touches of green olives
timer Finish
long, briny and sweet at the same time. Very ashy and smoky aftertaste
