Tasting Notes
아일라 남쪽 바닷가의 라프로익은 짙은 피트와 요오드 향으로 섬의 풍토를 가장 강렬하게 드러낸다. 2005년에 병입한 10년산은 잔에서 진한 호박빛을 낸다. 의외로 밀크 초콜릿과 바닐라의 부드러움이 먼저 오르고, 프랄린과 럼에 절인 건포도가 피트와 어우러진다. 40도의 도수로 입안에서는 달콤한 백포도주와 박하, 설탕에 절인 오렌지의 풍미가 묵직하게 입을 채운다. 마무리는 길고 말린 과일과 향신료가 깊게 머문다.

this is another story. Rather playful, starting on lots of milk chocolate and vanilla. It’s clearly very oaky but doesn’t appear to be drying or tea-ish at all. Very fudgy, developing, on all sorts of roasted nuts and praline, with notes of torrefaction, fresh walnuts, nougat, mocha… Hints of rum-soaked raisins, grape juice… And then we have some bold notes of pistachio halva and dried coconut… Rather beautiful, I must say, even if we get also something slightly rubbery (nothing excessive)
restaurant Palate
lots of punch and concentration considering its age, starting on huge notes of very old sweet white wine and getting then very minty and nicely sweet and sour, like some Chinese sauces. Develops on crystallized oranges and tangerines, Grand Marnier, vanilla fudge and fruit wine (strawberry)… Something quite salty all along… Gets finally rather spicy, but it’s not only ‘oak spices’. Clove, Chinese anise, soft curry, cinnamon… Lots of body, and a long and satisfying finish on dried fruits and spices, getting just slightly drying but hey, 36 years! An excellent surprise (well, not a surprise actually, many friends already liked it a lot). 92 points . MUSIC – Recommended listening: isn't this history?
