아일라 중심 보모어 마을의 증류소는 바다를 마주한 풍토 속에서 균형 잡힌 피트 몰트를 빚는다. 버번 캐스크에서 22년을 보낸 이 위스키는 깊은 황금빛을 띤다. 향에서는 옅은 훈연과 레몬, 바다 소금기, 가벼운 꿀이 층층이 깃들고 트로피컬 과일이 더해진다. 51.1도의 입안에서는 시트러스와 바닐라, 부드러운 피트 연기가 매끄럽게 흐른다. 중간에는 망고와 패션프루트의 달큰함이 기름진 질감으로 퍼진다. 보모어다운 우아한 피트와 과일의 여운이 길고 부드럽게 남는다.

it is a very medicinal Bowmore, full of ointments, camphor, notes of bandages, old cough syrup … for starters! Then more classic brine, ashes, lit cigar, tar and pine smoke. Boy scouts' campfire. With water: some oak spices popping out, some caraway (aquavit) and preserved vine peaches. Very nice nose
restaurant Palate
a little heavy this time, and a little too much on raspberries for me. It's true that I haven't even checked the cask-bill here. Port? Sweet sherry? We'll check that later… Some dissonances, tar and red berries, pomegranates, poppy jelly… With water: it's almost as if they had tried to recreate the style of the 1980s (Bowmore's, not Aston's), with some violet liqueur, touches of blood oranges, a little candy sugar…
