Tasting Notes
잔을 흔들어 향을 열면 셰리가 빚은 잼 같은 단맛이 먼저 번지고, 밀랍과 마누카 꿀, 구운 오크 위로 보모어다운 이탄 연기가 은은하게 겹쳐진다. 스페인산 하몬과 파이프 담배, 무스코바도의 뉘앙스가 복합적으로 얽힌다. 한 모금 머금으면 훈제 토피와 밀크잼, 버터스카치가 혀를 감싸고 쓴 오렌지가 균형을 잡는다. 올로로소와 PX로 마무리한 이 18년 아일라 몰트는 삼킨 뒤 짭짤하고 육감적인 뒷맛이 길게 남는다.

air Nose
a nose that's extremely 'sweet', jammy, as if they would have used sherry plus rechar. A lot of beeswax and manuka honey (boy that got expensive), toasted oak, some caraway liqueur or aquavit, a small gamey side (grouse), some Spanish ham, cigarette tobacco, muscovado, marmalade, plus, as I had already noticed last time in 2017 (2017! Scandal!), echoes of Lagavulin 16. Must be a very specific kind of peat + sherry combination
restaurant Palate
a great batch, a great whisky, even if this amontillado-type of dryness might not be for strictly everyone. Stunning smoked toffee, milk jam, butterscotch, pipe tobacco, spicy beef soup, bitter oranges…
timer Finish
only the finish is a tad drying. Wonderful salty, meaty aftertaste though. Biltong. Coriander leaves, picante pizza oil, maraschino (really, there's something Italian to this one)
