Tasting Notes
황금빛 호박색이 잔에 진하게 감돈다. 1990년에 병입된 옛 보모어 10년은 호두주와 낡은 가죽, 타마린드 잼과 마멀레이드에 가죽 같은 훈연을 겹쳐 아일라 특유의 개성을 은근하게 드러낸다. 한 모금에는 짭짤한 소금기와 호두, 랍상소총차와 훈제 굴의 풍미가 또렷하게 번진다. 40도의 낮은 도수 탓에 여운은 짧지만 토피의 달콤함이 깔끔하게 남는다.

some walnut wine at first, plus horse saddle and old leather jacket, tamarind jam, marmalade, a little spent engine oil (and voilà), then ras-el-hanout and a little ginger tonic. Blood oranges. This rather leathery smoke works well I have to say, even at 40% vol. There's also the obligatory lapsang souchong and cocoa
restaurant Palate
nice salty arrival, with lots and lots of walnuts and a cup of oversteeped lapsang souchong. Some grapefruit then, chicken bouillon, orange zests dipped into chocolate (orangettes), smoked oysters… All nice, the problem is that it would tend to nosedive after ten seconds, and that's strictly because of the minimal strength. An Aston Martin with an empty petrol tank (which is not an unseen situation)
