병에서 따라 잔을 두 번 돌리면 헤븐힐 특유의 곡물 단내가 먼저 풀린다. 코를 대면 캐러멜 팝콘과 구운 아몬드가 앞서고 뒤에서 감초가 스친다. 한 모금을 천천히 머금으면 18년치 오크 탄닌이 혀 양옆을 조이지만 이내 메이플의 단맛이 그것을 감싼다. 삼킨 자리에는 진저브레드의 온기가 남아 서서히 식는다. 장기 숙성 버번치고는 놀랄 만큼 마시기 편한 잔이다.
