Tasting Notes
백포도주처럼 옅고 맑은 빛이 잔에 고인다. 퍼스트필 버번 배럴에서 십이 년을 보낸 발베니 싱글 배럴은 상큼한 시트러스와 분필 같은 미네랄, 갓 벤 풀의 향으로 팽팽하게 시작한다. 신선한 오크와 파라핀, 풋사과의 서늘함이 코끝을 조인다. 47.8도의 입안에서는 레몬 셔벗과 초록 사과, 라임의 새콤함이 또렷하게 살아나며 미라벨 자두의 뉘앙스가 스친다. 팽팽한 산미와 미네랄이 끝까지 긴장을 늦추지 않는다. 여운은 젤리빈의 단맛에서 풀의 향으로 옮겨가며 끝에 옅은 신맛을 남긴다.

air Nose
fresh and citric at first, chalky and lemony, with touches of fresh oak (not totally dry) and just cut grass. A little iron too. It's very tight, with growing notes of paraffin and fresh cement, then green apples and a wee menthol/camphor combination. Refreshing altogether
restaurant Palate
really very good. Lemon sherbet, tight grasses, the greenest green apples and the greenest limes, then perhaps mirabelles and damsons, but it'll never get as mellow and rounded as some other casks that I had tried earlier
timer Finish
long and sweeter, more on jellybeans, then just a lot of grass. Perhaps a little too much sourness in the aftertaste, sour fruits…
