Tasting Notes
Colour
salmon, copper
air Nose
quite a bit of gunpowder at the beginning, this cask was probably 'mèché' before making its way to Islay. Perhaps it was one of those white wines from Sauternes that change colour so quickly, after all. Strawberry and apricot jam, quince paste, flint, gunflint... I'm not entirely sure I'm a big fan this time. With water: buds, buds, buds
restaurant Palate
bitter orange, a metallic aspect, still that black powder, blackcurrant, a peony character... With water: well, there's a rubber and bell pepper note coming through
timer Finish
long, with the same flavours lingering. A very young Saint-Émilion in the aftertaste
