Tasting Notes
리필 셰리 벗에서 나온 원액은 잔 안에 안정된 금빛으로 머문다. 향은 캐러멜과 살짝 태운 견과가 먼저 나오고 뒤이어 새 가죽과 대패질한 활엽수, 구두약 같은 묵직한 냄새가 따라온다. 48.1도의 입맛은 달기보다 쌉쌀해 풋호두와 진한 커피의 쓴맛이 앞서고 통계피와 여러 향신료가 혀 옆을 자극한다. 몰츠 오브 스코틀랜드가 병입한 이 1988년은 단맛에 기대지 않는 셰리를 보여주며, 생강과 강황, 쓴 오렌지의 여운이 오래 이어진다.

air Nose
caramel and slightly burnt nuts and almonds, with a touch of char and rubber coming through, followed by new leather and hardwood shavings (walnut, cherry, that sort of thing). Also, some green walnuts, shoe polish, allspice, and a bit of orange peel. Not bad at all
restaurant Palate
very much in line with the nose, with a rather bitter and peppery sherried side, plus some acidic, bitter coffee (which we like), then mixed spices and raw cinnamon. The green walnuts remain upfront, and we do quite like that bitterness
timer Finish
long, becoming nuttier but still spicy. Ginger and turmeric, with bitter oranges and a touch of Cynar in the aftertaste
