Tasting Notes
향은 캐러멜과 살짝 태운 견과에서 출발한다. 이어 그을음과 고무, 새 가죽과 활엽수 대팻밥이 드러나고 풋호두와 구두약, 올스파이스가 층을 더한다. 팰럿은 49도에서 쌉쌀하고 후추 같은 셰리의 결을 보여주며 산미 있는 커피와 혼합 향신료, 생계피가 순서대로 발전한다. 이 쓴맛이 오히려 구조를 잡아준다. 피니시는 길고 고소해지지만 여전히 매콤하며 생강과 쓴 오렌지가 남는다. 개성이 뚜렷한 1991년 빈티지다.

air Nose
caramel and slightly burnt nuts and almonds, with a touch of char and rubber coming through, followed by new leather and hardwood shavings (walnut, cherry, that sort of thing). Also, some green walnuts, shoe polish, allspice, and a bit of orange peel. Not bad at all
restaurant Palate
very much in line with the nose, with a rather bitter and peppery sherried side, plus some acidic, bitter coffee (which we like), then mixed spices and raw cinnamon. The green walnuts remain upfront, and we do quite like that bitterness
timer Finish
long, becoming nuttier but still spicy. Ginger and turmeric, with bitter oranges and a touch of Cynar in the aftertaste
