Tasting Notes
짙은 호박빛이 잔 바닥까지 무겁게 깔려 있다. 향은 소고기 육수와 다크 초콜릿으로 대담하게 문을 열고 곧 건포도와 호두, 태운 캐러멜이 겹쳐 올로로소 셰리의 진한 결을 그린다. 55.1도의 힘이 실린 입 안에서는 토피와 감초, 훈제 햄과 자두가 두꺼운 질감으로 흐른다. 단일 캐스크에서 열여덟 해를 보낸 밀도가 마지막까지 흐트러지지 않는다. 여운은 짭짤하고 발사믹하며 살구 리큐어의 달큰함이 오래 남는다.

starts on beef stock and dark chocolate, more oloroso than the olorosoest of all olorosos and gets then extremely complex, with no obvious aromas standing out anymore. It’s rather an assemblage of myriads of tiny notes, such as raisins, beef jerky, milk chocolate, walnuts, bread crust, burnt caramel, rum, strawberry jam, ash smoke, ham, wine sauce, toffee, kirsch, coffee, bacon, moss, mushrooms… Agreed, what a litany! Oh, and maybe cooking turnips
restaurant Palate
well, the first feeling we get is ‘old Macallan!’ It’s big, robust whisky and really, it’s very Macallan (I know this is of little use, sorry.) Smyrna raisins, toffee, liquorice, smoked ham, prunes, coffee… Oh well, you see what I mean. Very Macallan indeed and this is adorable, even if it does get just a tad dryish after a moment
timer Finish
long, a tad rawer now, salty and balsamic but also more candied and fruity at the retro-olfaction (apricot liqueur)
