Tasting Notes
노즈는 캐러멜과 살짝 태운 아몬드에서 출발해 새 가죽과 활엽수 대팻밥의 뉘앙스로 발전한다. 풋호두와 구두약, 올스파이스가 뒤를 받치며 오렌지 껍질이 살짝 얹힌다. 팰럿은 쌉쌀하고 후추 기운이 강한 셰리 성격으로, 산미 있는 커피와 거친 계피가 명확하게 드러난다. 피니시는 길게 이어지며 생강과 강황, 쓴 오렌지가 남는다. 48.2도 30년 숙성분으로, 단맛보다 쓴맛의 구조감이 중심을 잡는다.

caramel and slightly burnt nuts and almonds, with a touch of char and rubber coming through, followed by new leather and hardwood shavings (walnut, cherry, that sort of thing). Also, some green walnuts, shoe polish, allspice, and a bit of orange peel. Not bad at all
restaurant Palate
very much in line with the nose, with a rather bitter and peppery sherried side, plus some acidic, bitter coffee (which we like), then mixed spices and raw cinnamon. The green walnuts remain upfront, and we do quite like that bitterness
timer Finish
long, becoming nuttier but still spicy. Ginger and turmeric, with bitter oranges and a touch of Cynar in the aftertaste
