잔을 천천히 돌리면 앰버빛이 유리벽을 타고 느리게 흘러내린다. 코끝을 가져가면 셰리라기보다 풀밭에 가까운 향이 먼저 올라오고 마지팬과 체리, 생호두의 떫은 기운이 뒤따른다. 한 모금 머금으면 카데넌스가 1995년에 병입한 23년 셰리우드 숙성의 건조하고 잎사귀 같은 결이 혀를 훑고, 호두주 같은 쌉쌀함이 그 위에 얹힌다. 46도답게 삼키기 편하며 목을 넘기고 나면 고소한 견과와 옅은 꿀이 천천히 따라온다.

it’s a rather grassy kind of sherry, with quite some marzipan, cherries, grass, fresh walnuts, green oak (and bark), some cork – not like in a corked whisky, that is – and then aromatic herbs, which I always find nice. Chicken soup with chives and parsley

same flavours, so not need to list them all again. Walnut wine, herbs, walnuts… In short, an unusually dry and leafy sherry. Shall we call this baby a ‘Manzacallan’?

quite long, with more classic nutty and honeyed tones
