Tasting Notes
잔을 코끝에 가져가면 카올 일라 특유의 옅은 훈연과 레몬, 바다의 짠 내음이 가장 먼저 올라온다. 잔을 흔들면 30년 숙성이 빚어낸 부드러운 보리와 미네랄이 그 사이로 비친다. 한 모금 머금으면 46도의 차분한 힘이 그을린 보리와 시트러스로 매끈하게 풀린다. 1983년에 증류해 오래 숙성한 만큼 아일라의 연기는 가볍고 우아하게 가라앉는다. 혀 위에서 굴리면 옅은 훈연 아래로 레몬과 미네랄이 한 겹 더 또렷해진다. 삼킨 뒤에도 옅은 훈연과 레몬의 산뜻함이 혀끝에 길게 남는다.

Graceful indeed, much more complex than the restless youngsters that we tried yesterday, with waxes, oils, zests, almonds, seaweed, oysters, anchovies, sardines, overripe apples, ink, greasy grasses, engine oil, hessian and almonds. And if you’re nosing deeply, you’re transported to a meadow on the southeast shore of Islay. That would be the Oa, wouldn’t it
restaurant Palate
pretty perfect. There’s maybe a very small kind of chemical touch in the very first drops (Fanta-like), but then it’s a perfect old Caol Ila, still vibrant (as they say – you can’t write tasting notes if you don’t use vibrant from time to time), with some salt, olive brine, lemon, smoked salmon, lapsang souchong and this very particular grassiness that’s to be found in… old Caol Ila. Some kind of cactus?
