Tasting Notes
버번 호그스헤드에서 스물일곱 해를 보낸 오랜 숙성이 카올 일라의 피트를 부드럽게 익혔다. 1983년 증류한 이 아일라 원액은 향에서 옅어진 모닥불 연기와 레몬, 밀랍이 우아하게 얽혀 오른다. 입에서는 꿀과 시트러스, 가벼운 훈연이 미끄러지듯 번지고, 46도의 절제된 도수가 오래 묵은 오크의 결을 매끄럽게 풀어낸다. 옅은 황금빛 아래로 부드러운 스모크와 흰 후추의 여운이 잔잔히 이어진다.

it’s one of these older Caol Ilas that start more on sour fruit juice, as well as on fresh almonds and brine. Putty, marzipan, apple juice, lemon, grapefruit, oysters… The peat is discreet but it’s there, crouching in the darkness ;-). In fact, it’s not unlike the CIs that were distilled in the 1960s (that we only know through G&M’s old bottlings). Also camphor, herbs… It’s complex whisky!

ah yes, old style indeed. Do you know Pulmoll? Mint, eucalyptus drops, a sootiness, shellfish, some nutmeg, bergamot, touches of honeydew, liquorice… Remains complex and frankly excellent. Very good body and in this case we wouldn’t have needed ‘cask strength’

long, with more salt and pepper and some salted anchovies in the aftertaste
