Lovely whiffs of grapefruits and hessian, coal ashes, and burnt pine wood. No raisins despite the sherry, we cheer… With water: hessian, dough, fresh baguette, rain-soaked fabric

this one’s millimetric indeed, extremely straight, on some ashes, grapefruit, green pepper and sea water combination. All that works a treat. With water: some excellent chenin blanc from the best parts of the Loire Valley. We’ve known some Savennières, for example…
