잔을 가만히 흔들면 사라진 털러모어의 1951년 빈티지가 잔 벽에 옅은 호박빛을 흘려낸다. 코끝에 가져가면 36년의 보관이 길어낸 마른 사과, 묵은 가구 폴리시, 옅은 무화과 향이 가장 먼저 솟아오른다. 한 모금을 머금으면 40도의 부드러운 알코올이 꿀과 곡물의 고소함을 입천장에 잔잔히 펼친다. 삼키면 옅은 시나몬과 마른 풀냄새가 길게 따라오며 사라진 아일랜드 증류소의 옛 위스키 문법이 또렷이 깃든다.
