interesting! A typical Caol Ila encapsulated in a rather elegant oakiness, not a vanilla bomb at all actually. Fresh oysters, seaweed, wet limestone, dill and only hints of grated coconut, ginger, caramel and Alexander cocktail (say Bailey’s). Faint grainy notes (porridge). The oakiness gets more obvious after fifteen minutes
restaurant Palate
it’s the oak that strikes first now, pretty much in the style of the young ‘wooden’ Glenmorangies (post oak, Missouri, artisan et al). The combo works well here, and it seems that it makes the saltiness stand out. Other than that we’re all on café latte, vanilla fudge, gingerbread, pine resin and kippers, the peat working more as a spice
timer Finish
rather long, Caol Ila’s usual coastal peatiness finally winning the ‘fight’ over the new oak
