very modern, very ‘bourbon’. Vanilla, honey and maple syrup as well as warm sawdust, pencil shavings and notes of roasted pine nuts. Maybe sesame oil, pecan pie… It’s quite expressive
restaurant Palate
rich, coating, sweet, almost thick. Same kind of mouth feel as the Royal Canadian’s, probably with less individuality but also more ‘state-of-the-art modernity’. Oh well… Loads of vanilla and maple syrup plus some black pepper and maybe even chillies. Ginger
timer Finish
not very long but sweet and candied, honeyed. Touches of chilli again in the aftertaste
