Tasting Notes
옅은 황금빛이 잔 속에서 맑게 흔들린다. 29년이라는 긴 시간이 카올일라 특유의 섬 연기를 부드럽게 다듬어, 코끝에는 잦아든 모닥불과 짠 바다 공기가 먼저 닿는다. 한 모금 머금으면 레몬 껍질의 산뜻함 위로 잔잔한 피트가 흐르고, 54.7도의 기운이 혀를 데우면서도 거칠지 않다. 1984년 호그스헤드에서 비롯한 바닐라가 은은히 비치고, 여운에는 식은 재와 바닷소금의 기억이 길게 이어진다.

and yet the sherry feels, but it’s rather a fino-ish kind of sherry, with plenty of walnuts and a lot, and mean really a lot, of tobacco. Both cigarettes and Cuban cigars. Wonderful whiffs of sunbathed stones on a Greek island (excuse me?), some earth, some camphor, old clothes in an old wardrobe, old books, then even more cigars… This is truly spectacular, but I’ve already seen such noses that led to a wrecked palate, so vorsicht! With water: it’s not the first time that I’ve thought that Caol Ila could be more medicinal than Laphroaig
restaurant Palate
immense, huge, massive, and yet very elegant. The resins and saps are coming out, which is just perfect. With water: a little more fruits and sweetness to bring civilisation to this oldish beast. A good load of salt too

long and extremely salty. Really very salty, was some manzanilla involved?
