오크 캐스크에서 23년을 보낸 1974년 카올 일라의 시간이 잔 안에서 강하게 풀려난다. 향에서는 마른 해초와 옅은 잿내, 라임 껍질이 차례로 일어나고 입에서는 훈연된 베이컨과 짠 캐러멜, 검은 후추가 빽빽한 단맛으로 흐른다. 60.5도라는 캐스크 강도가 1974년이라는 옛 빈티지의 견고한 피트를 끝까지 밀어 올리며 옅은 호박빛이 잔에 깊이 머문 채 훈연이 길게 이어진다.

perfection. Incredible combination of salted fish, lemon juice, smoked oysters (I’ve heard you can’t smoke oysters, you have to use liquid smoke but the end result is worth it) and green curry.
