Tasting Notes
엑스버번 호그스헤드에서 26년을 보낸 시간이 폐쇄된 콜번 증류소의 희소한 캐릭터를 보존했다. 잘 익은 사과와 풀내음, 옅은 꿀 향이 코끝에서 산뜻하게 피어오른다. 한 모금은 49.5도에서 매끄럽게 흐르며 바닐라와 보리 단맛, 시트러스가 잔잔히 잠겨 있다. 사라진 스페이사이드의 흔적이 옅은 금빛 잔에 담겨, 여운은 가벼운 오크와 곡물로 깔끔하게 이어진다.

typical old Highland style at first sniffing, a style that’s more and more difficult to find at operating (Clynelish, Pulteney, Springbank and? And?...) It’s certainly rather smoky, dry, maybe a tad wobbly aromatically but the absence of in-your-face sweetness makes it most desirable. Moss, mushrooms, mustard, soot, saltpetre, wet cardboard, chalk, grass, paraffin, fermenting hay… Really old style!
restaurant Palate
once again, it’s no perfect whisky at the attack, it’s probably a tad too cardboardy and oddly sooty/mineral but the rest is superb. Wasabi, leather, old rum, walnuts, dry sherry, pomegranate, dry white wine (sauvignon)… It’s kind of naughty but don’t we all like that?
