Tasting Notes
하일랜드 인버네스 닫힌 밀번 증류소가 1975년 증류한 원액이 25년을 견뎠다. 모레이 만 입구의 잔잔한 풍토가 결에 부드러움을 새겼다. 잔에는 진한 황금빛이 잠겨 있고 노즈에는 들꽃 꿀, 마른 풀잎, 가벼운 견과의 향이 또렷이 깃든다. 입에 들어오면 61.9도의 캐스크 스트렝스 알코올과 함께 익은 사과, 바닐라, 보리 단맛의 풍미가 두꺼운 질감으로 흐른다. 여운은 레어 몰츠의 단단한 결과 묵은 오크로 길게 이어진다.
AITasting Notes
air Nose
this one is much rawer, smoky, meaty and grassy, with notes of mustard seeds, ham, wet chalk… Truly wild. Not pungent despite the high alcohol but let’s try it with water (at roughly 45%): we have more wax now, fir honey, vanilla pods, pollen… Water really worked, this one is an excellent swimmer but it’s not quite as complex as the 1969. Hints of wet dog
restaurant Palate
punchy and much fruitier, on canned pineapples, oranges and a slight waxiness. Lots of alcohol of course that quite masks the whole. So, with water: even sweeter but also spicier, with more tannins but also quite some salt and those mustardy notes. Long, peppery and spicy finish, with less sweetness but a little resin now… The whole is quite ‘natural’, a good example of most Rare Malts’ style
