잔을 가까이 하면 사부로마루 2021의 올로로소 버트가 더한 건과일과 옅은 훈연이 동시에 두드러진다. 일본의 젊은 증류소답게 마른 자두와 가죽, 미네랄 같은 그을음이 명확하게 드러난다. 59도의 도수가 또렷한 입에서는 건포도와 다크초콜릿, 짭조름한 연기가 진하게 깔린다. 두 번째 모금에서는 셰리의 단맛과 스모크의 대비가 한층 분명해진다. 어린 숙성에도 구조감이 단단하며, 피니시는 마른 셰리와 훈연이 길게 이어진다.
