air Nose
rather vibrant and fragrant at first nosing, starting very grainy (grain barn) and sort of feinty. The aromas are quite numerous but rather unusual – hard to put names on them. Ah, yes, very buttered mashed potatoes, ginger ale… Then caramel crème, old sweet wine, gingerbread, beer… And then we have some pastries, cake, toffee… Lots happening here but it’s perhaps lacks definition. Goes back to hot milk and porridge before it gets frankly vegetal (fern, hay) and slightly sourish and dusty. Very interesting but not directly enjoyable, I’d say
restaurant Palate
ah, now it’s much cleaner, more ‘defined’. Bold notes of roasted nuts and flower jellies, fruit jam, Turkish delights and Japanese grilled tea. Rice cake, burnt cake and bread, pear eau-de-vie… Still a ‘different’ profile. Some waxy notes, propolis, dried herbs (lots of thyme!) Gets very nutty (hazelnut liqueur), maybe a tad smoky… The finish is medium long, on dried fruits (dates)… An excellent palate after a nose that’s a bit ‘strange’: 87 points . Glenugie 27 yo 1977/2005 (46.7%, Signatory, cask #5506, 220 bottles)
