잔을 천천히 돌리면 옅은 황금빛이 가볍게 출렁인다. 코끝을 가져가면 이미 문을 닫은 증류소의 술답게 잘 익은 배와 사과, 마른 꽃의 향이 조심스레 피어오른다. 한 모금 혀 위에 올리면 리필 버번 호그스헤드에서 온 보리사탕과 바닐라가 부드럽게 번지고 옅은 풀내음이 뒤를 받친다. 삼킨 뒤에는 은은한 꿀과 백후추가 입 안을 맴돌며 25년의 정적이 천천히 가신다.

the style is there again, with some ink and chalk, but this time it’s cleaner, without any feinty/yeasty or bitter notes. Leather and porridge, candle wax, then something very ‘funny’, Provence herbs. Rosemary, thyme, bay leaves, even pine needles. And a little ham in the background
