Tasting Notes
잔을 코끝까지 들어 올리면 카올 일라다운 그을린 베이컨과 레몬, 짭조름한 바닷내가 함께 올라온다. 잔을 흔들면 30년이 다듬은 부드러운 연기와 꿀이 한층 또렷해진다. 한 모금을 머금으면 오랜 호그스헤드 숙성이 빚은 잔잔한 피트와 올리브 오일 같은 질감이 혀를 감싼다. 혀끝에 닿는 순간 라임과 흰 후추가 솟는다. 50.5도를 삼키면 오래된 아일라다운 식어가는 연기가 길게 따라온다.

that’s the problem with well-aged Caol Ilas, they’re unsurprisingly nice. Seashells, lemon liqueur, resinous peat (putty-like), marzipan, almond oil, carbon paper, old books, a touch of rubber (new wellies)… With water: younger! So not a grandma at all, all it needed was a little water (and not cream sherry…)
restaurant Palate
just bloody good, as they say on Islay. Big, peaty, salty, citrusy, oily, a tad sappy, getting grassier (green walnuts)… It’s quite youthful given its age. Could as well have been 15 years old
timer Finish
ooh, lemons and citrons come out, together with more sharpy almondy aromas. Barley water, putty, linseed oil, all that. The peaty remains heavy
