잔을 코끝에 가져가면 스코틀랜드 최북단 울프번을 올로로소 셰리에서 10년 숙성한 유로 2024 한정판의 짙은 호박빛이 풍기는 셰리 향이 가장 먼저 인사한다. 서소 항구의 청량한 공기 속에서 자란 위스키답게 짭조름한 미네랄과 묵은 건포도, 그리고 가죽 향이 또렷이 깃들어 있다. 한 모금을 머금으면 46도가 부드럽게 입천장을 덮으며 다크 초콜릿과 무화과가 굴러간다. 삼키고 나면 신생 증류소답지 않은 깊은 단맛이 깊게 머문다.
