노즈는 아메리칸 오크 숙성 뒤 칼바도스 피니시에서 온 잘 익은 사과와 바닐라, 마른 꽃 향으로 열린다. 스페이번 2009 7년 숙성답게 스페이사이드 몰트의 꿀과 시트러스 뉘앙스가 그 위로 발전한다. 팰럿은 46도의 도수 위로 사과 단맛과 흰 후추, 옅은 오크가 또렷하게 드러나며 깔끔한 구조감을 만든다. 피니시는 마른 사과와 오크로 중간 길이로 이어지고, 칼바도스 캐스크의 과실 개성이 산뜻한 균형 속에 또렷하게 남는다.

apple juice and quite a bit of fresh plaster, oatcakes, porridge, a little pear, some grist… The bourbon casks were rather shy here, but one appreciates this utterly natural character, no make-up at all

very much like artisanal pear eau-de-vie, plus some hay and lemon peel. Not very easy, but I think it could handily replace Russian vodka in cocktails

medium length, dry and herbal profile, rather astringent
