스페이사이드 로시스의 좁은 골짜기에 자리한 스페이번은 맑은 샘물로 산뜻한 몰트를 빚는다. 1975년 증류돼 15년을 보낸 이 오래된 보틀링은 잔에 옅은 황금빛을 담는다. 잘 익은 사과와 헤더 꿀, 옅은 풀 향이 또렷이 솟아오르고, 63.1도의 강렬한 힘을 타고 입에서는 보리 사탕과 시트러스, 향신료가 단단하게 번진다. 산뜻한 과일 단맛과 미네랄이 긴 여운으로 이어진다.

there are many similarities, around apples and eau-de-vie, but there are also extra-layers of waxes, metal polish and limoncello, plus some old chartreuse. With water: incredible, taking water gracefully. Fresh paint, more limoncello, chalk, some camphor, old cough syrup, Bénédictine… Were some monks running Speyburn Distillery in 1975?
restaurant Palate
burns a bit but you do feel that this is going to be perfect, with an incredible oily texture that doesn't only come from the high ethanol. Some sublime old-school herbal liqueurs kept in stoneware, plus chalk and, indeed, homemade limoncello. Every tried grapefruitcello? Or pompelmocello? (not sure that's the real name). With water: amen. More chalky pompelmocello (just checked Google, that's an actual name!)
