버번 호그스헤드에서 27년을 보낸 숙성이 스페이사이드 디스틸러리 1991의 잔잔한 성격을 깊게 다듬었다. 1991년산 원액답게 향에서는 잘 익은 사과와 꿀, 마른 풀의 향이 부드럽게 번진다. 입에서는 48.8도의 도수가 보리 단맛과 바닐라, 견과의 고소함을 또렷이 깃들게 한다. 깊은 황금빛 너머로 둥글고 단정한 여운이 길게 이어진다.
