Tasting Notes
오크 캐스크에서 17년을 보낸 숙성이 사라진 증류소 임페리얼의 1995년 빈티지를 차분히 익혔다. 우드의 영향으로 코에는 사과와 배, 바닐라와 가벼운 꿀이 맑게 오른다. 입에서는 55.1도의 도수가 시트러스와 캐러멜의 단맛을 매끄럽게 밀어 올리고 스페이사이드다운 곡물의 고소함이 받친다. 옅은 황금빛을 지나 여운에는 바닐라와 잘 익은 과일이 깔끔하게 이어진다.

air Nose
less aromatic oak and herbs, more straight fruits, porridge and a combination of aniseed and mint. Some custard too, warm croissants… So yes, it’s rather more ‘usual’ so far. With water: becomes sootier, unlike the above sister casks. Slightly dirty (old basement)
restaurant Palate
almost the same citric explosion as in the Signatory, but this time the cask seems to be more talkative, which is a little strange given the lighter colour. You know, colours… There’s also quite some lime mixed with strong green tea and white pepper. With water: same as above. Cactus juice, vegetables, earth. Fun stuff
timer Finish
medium length. Rather sooty/earthy/mustardy
