카올 일라 1983년 빈티지가 30년의 리필 오크 숙성을 거쳐 옅은 황금빛으로 잔에 잠긴다. 잔에서 솟는 향은 그을린 부두 목재와 라임 껍질, 굴 껍데기의 짠 미네랄이 차례로 피어오른다. 입에 머금으면 훈제한 베이컨과 흰 후추, 55.1도의 강한 알코올이 또렷한 결로 흐른다. 시간이 다듬어준 피트는 거칠지 않고 깊게 머무르며 여운에는 바닷바람과 그을린 오크의 향료가 길게 이어진다.

this is different. There’s some toasted oak, there is some coffee, there’s some charcoal, and there’s a very distant and almost elusive Caol-Ila-ness, which comes unexpected from the owners. What I also get, mostly, is a wonderful artisan cider, like they make in the best parts of Normandy. And old cigars (advance warning, that’s always a good sign). With water: it’s smoked cider of the highest order. I find it intriguing that Diageo’s First Nose(s) would have come up with such a profile

sweet Vishnu! This is implacable, sharp, acrid, oaky in a good way, mercurochromy spirit from Islay. Much bigger, powerful, and almost aggressive than expected. I even find it a little dangerous. With water: oh lovely. Smoother, gentler, civilised. Smoke and rosehips, I’d say
