잔을 천천히 흔들면 올로로소가 남긴 짙은 마호가니빛이 잔 벽을 적신다. 코를 가져가면 호두와 가죽, 잘 말린 자두의 향이 차례로 올라온다. 한 모금 삼키면 16년 묵은 매녹모어 원액 위로 올로로소 셰리의 쌉싸름한 단맛이 겹쳐 흐르고, 55.6도의 기운이 혀를 단단하게 감싼다. 목을 넘긴 뒤에는 다크초콜릿과 볶은 커피, 마른 향신료의 끝맛이 깊게 머물러 오래도록 사라지지 않는다.
