Tasting Notes
노즈에서는 쿨 아일라 특유의 깨끗한 해안 피트와 올리브, 굴 같은 짭짤한 향이 먼저 명확하게 드러난다. 모스카텔 셰리 버트가 옅은 단맛과 캠퍼의 뉘앙스를 더한다. 팰럿은 56.2도의 힘을 싣고 훈연된 무스카트와 라임, 파인애플과 장미 젤리가 층을 이루며 발전한다. 정갈한 원액이 모스카텔의 단맛을 무리 없이 받아낸다. 피니시는 중간 길이로 파인애플과 소금기, 훈제 연어가 남는 페시 일라 2016이다.

it's that Caol Ila's such a pristine distillate that it could take just anything and walk out proud. What I'm trying to say is that this is Caol Ila, not Moscatel – which was not always the case, say 15 years ago. We've got a plateful of olives and oysters in front of us. Buon appetito (S., that's Italian, not Spanish). With water: lemons, crushed oyster shells (some people use that as a fertiliser), a touch of camphor…
restaurant Palate
good fun, with a Moscatel that's very obvious this time, without being too cloying. Remember, Moscatel is for old ladies. So, well, we've got smoked muscat here, with some lime, pineapples and rose jelly... With water: some kind of balance has been kept but it would tend to get a tad sweetish, to be honest.
