잔을 천천히 돌리면 카루이자와 1981의 짙은 마호가니빛이 잔 안쪽을 깊게 휘감으며 흘러내린다. 잔을 코끝에 가져가자 퍼스트필 셰리 캐스크가 길어준 건무화과, 흑설탕 시럽, 일본 오크 특유의 향나무 노트가 묵직하게 입을 향한다. 한 모금을 머금으면 55.4도의 알코올이 매끄럽게 입천장을 덮으며 다크 체리와 가죽으로 발전한다. 사라진 카루이자와 증류소의 32년 시간이 캐스크 안에 빈틈없이 갇혀 있다. 잔을 입가에서 살짝 떼고 다시 가져가면 셰리 캐스크의 단맛이 또렷이 떠오른다. 삼킨 뒤에도 깊은 향료가 마지막까지 따라온다.
