Tasting Notes
백포도주를 닮은 옅은 빛이 잔에 투명하게 담긴다. 버번 오크 호그스헤드에서 스물두 해를 보냈지만 나무는 앞에 나서지 않는다. 향은 젖은 석회암과 자갈, 부싯돌의 광물질 인상으로 열리고 석유와 레몬, 조개껍데기의 냄새가 뒤를 잇는다. 그 사이로 갓 벤 풀과 석탄 연기가 스친다. 입에서는 키위와 레몬, 붉은 대황의 산미가 또렷하고 백묵과 점토의 건조한 감촉이 혀를 덮는다. 여운은 길고 광물질과 레몬의 결이 끝까지 이어진다.

ooooh… crystal-clean Springbank! This nose is reminiscent of that of the old pale 5yo from the 60s or 70s, really. Wet limestone, gravel, flints, petroleum, lemon, Barbour polish, seashells, grass and coal smokes… I have to say we’ve had other magnificent 1993s, many rather Longrowy. Could be Longrow indeed. With water: yes! That old tweed jacket after many rains, and a pile of all Newsweeks. Right, any magazines
restaurant Palate
not Longrow, this is much fruitier. Kiwis, lemons, red rhubarb, then chalk and clay, a drop of ink, one oyster, and a wee bit of tyre plus a slice of fresh baguette (any breads, really, excusez-moi madame monsieur). Epitomically Springbank. With water: bingo! Don’t just add too much H2O, it needs a lot of time to adapt to reduction and it won’t be ready yet when you’ll go to bed
