호박빛 술을 잔에서 흔들면 짙은 기름 자국이 벽을 타고 느리게 내려온다. 코를 넣으면 미소된장과 초콜릿 소스, 하몽과 바닷물 냄새가 한꺼번에 밀려와 24년 셰리 캐스크의 이력을 짐작하게 한다. 한 모금 삼키면 후추와 짠 감초, 커피와 훈제 육포 같은 맛이 혀를 강하게 눌러 48.8도라는 숫자보다 훨씬 진하게 느껴진다. 넘긴 뒤에도 소금기가 더 짙어지며 길게 남는다.

straight on miso, marrow quenelles, chocolate sauce, jamon iberico, Bovril, old toolbox, seawater, pine liqueur, mustard sauce, mutton suet, parsley… Well this is complex for sure, but the palate could be an utter mess, let's see

it is not. Well, not quite. Crazy fino by crazy Andalusians, huge pepper, obscene coffees, saltiest liquorices, ueber-spicy spicy beef jerkies, tobacco juice… It is not that the spirit's too strong, it is not, but boy is this heavily concentrated, herbal, spicy and salty!
