Tasting Notes
잔을 두어 번 돌리고 코를 가져가면 셰리의 단맛보다 생양모와 찰흙, 젖은 분필과 슬레이트가 먼저 나온다. 어리고 광물에 가까운 향이지만 빠진 것도 넘치는 것도 없다. 한 모금을 머금으면 46도의 술이 감귤과 후추로 시작해 바닷물과 사과 주스로 갈라지며 단순함 그대로 완결된다. 삼킨 뒤에는 감초와 민트, 레몬과 재가 짧지만 또렷하게 남아 9년 원액의 정확한 성격을 보여준다.

the house style when there’s no sherry. Direct, slightly fermentary, with raw wool, modelling clay, damp chalk, and slate… You get the idea—it’s rather mineral, simple, almost youthful, yet to me, of an almost Caravaggesque beauty. Nothing is missing, and nothing is superfluous
restaurant Palate
citrus and pepper, plus seawater and apple juice. That’s it—it’s little, and it’s a lot. A new kind of old Springbank—abstract, simple, magnificent. Isn’t complexity overrated in whisky? (Of course not—pure b*ll*cks.)
