중부 하이랜드 도운의 딘스톤은 테이스 강의 맑은 물과 서늘한 공기 속에서 깨끗한 몰트를 빚는다. 버번 호그스헤드에서 15년을 보낸 이 위스키는 옅은 황금빛을 띤다. 향에서는 보리와 꿀, 잘 익은 사과가 산뜻하게 올라오고 갓 켠 오크의 단내가 더해진다. 52.5도의 입안에서는 몰트 단맛과 바닐라, 가벼운 향신료가 깔끔하게 흐른다. 중간에는 밀랍과 잘 익은 배의 단맛이 부드러운 질감으로 퍼진다. 딘스톤다운 맑은 보리향과 꿀의 여운이 길고 부드럽게 남으며 옅은 오크가 맺힌다.

not much in the way of tequilaness or agaveness at this point, rather a malty malt, leaning towards bruised apples and candlewax. With water: hints of paraffin and a subtle note of olive oil. We rather like that

odder, fairly rubbery, with lime peel and a distinctly offbeat edge. The addition of water should do it a world of good. With water: indeed, much improved, becoming saltier, the olive oil makes a comeback, a faint smokiness emerges (think pine wood smoke), and the tequila finally begins to show itself
