Tasting Notes
노즈에서는 딘스턴 30년 빈티지가 올로로소 셰리 캐스크 마무리의 영향이 가장 먼저 두드러진다. 30년 숙성과 46.7도의 도수가 균형이 단단한 구조감을 만든다. 리미티드 에디션답게 캐스크 마무리의 농축이 명확하게 드러난다. 한 모금 머금으면 건포도와 호두, 가벼운 향신료가 두꺼운 질감으로 흐른다. 피니시는 셰리의 단맛과 묵은 오크의 쌉싸름함이 길게 발전한다. 비피티드 하이랜드 증류소의 정체성이 또렷이 깃든다.

well, the distillery’s very peculiar character still shines through, in the form of an immense plate of warm porridge sprinkled with vanilla custard and maybe a little yoghurt and Swiss cheese. Add a little grated ginger and touches of cardamom and it’s ready. Bon appétit!
restaurant Palate
less whacky and certainly influenced by the new oak, with some, well, oak as well as ginger and yet again these notes of porridge. Becomes grassier and globally drier over time. Quite some pepper and something a little sour in the background. Muesli this time?
timer Finish
shortish, peppery and kind of ‘Indian’. Popadoms? A yeastiness and a tannicity in the aftertaste
