샤르도네를 닮은 옅은 황금빛이 잔 속에 은은히 비친다. 리필 호그스헤드에서 서른 해를 보낸 시간은 초원의 꿀과 말린 과일, 활짝 핀 꽃의 향으로 먼저 말을 건넨다. 뒤이어 밀랍의 결이 올라오고 아주 옅은 연기가 그 끝을 마무리한다. 한 모금은 꿀을 두른 시트러스로 시작해 석회질을 밟는 듯한 미네랄 골격 위로 후추가 잔잔히 스친다. 43.1도의 낮은 도수에도 여운은 뜻밖에 길게 이어지며 시트러스가 다시 돌아와 오래 머문다.

Then comes beeswax, leading us into more secondary and tertiary realms (whatever those might be), while the faintest wisps of smoke complete the masterpiece

here we go—this time, we’re fully in the realm of honeyed citrus, with a touch of pepper, though less than in the previous ones. The very mineral chardonnay-from-limestone-like backbone supports it all beautifully. You could almost serve this alongside a poularde demi-deuil or some quenelles de brochet sauce Nantua .
