셰리 호그스헤드에서 온 유황 뉘앙스가 노즈에서 가장 먼저 두드러진다. 삶은 달걀과 성냥, 브레이크 패드 같은 향이 앞에 서고 커피와 비터 초콜릿이 그 뒤를 받친다. 호불호가 분명히 갈릴 도입부다. 51.5도의 팰럿은 노즈보다 훨씬 정돈되어 마멀레이드와 가죽, 소금에 절인 안초비의 감칠맛이 순서대로 발전한다. 물을 더하면 송로버섯과 소고기 육수 같은 결이 드러난다. 피니시는 길고 건조한 초콜릿 한 갈래로 수렴한다.
