Tasting Notes
연한 금빛이 잔 속에서 맑게 머문다. 셰리가 없는 스프링뱅크의 민낯이 그대로 드러나 젖은 양모와 찰흙, 젖은 백묵과 점판암의 냄새가 곧게 올라온다. 46도의 입은 감귤과 후추, 바닷물과 사과즙 정도로 단출하지만 그 단출함이 오히려 또렷하다. 오크 통 열여섯 해는 이 위스키에 무엇을 더하기보다 군더더기를 덜어 낸 쪽에 가깝다. 여운은 감초와 민트, 레몬과 재가 정확한 선을 그으며 마무리된다.

the house style when there’s no sherry. Direct, slightly fermentary, with raw wool, modelling clay, damp chalk, and slate… You get the idea—it’s rather mineral, simple, almost youthful, yet to me, of an almost Caravaggesque beauty. Nothing is missing, and nothing is superfluous
restaurant Palate
citrus and pepper, plus seawater and apple juice. That’s it—it’s little, and it’s a lot. A new kind of old Springbank—abstract, simple, magnificent. Isn’t complexity overrated in whisky? (Of course not—pure b*ll*cks.)
