Tasting Notes
유기농 보리로 만든 1992년 증류액을 7년만 숙성해 병입한 보틀링으로, 노즈는 셰리 없는 스프링뱅크의 민낯을 명확하게 드러낸다. 생양모와 찰흙, 젖은 분필과 점판암의 광물성이 곧게 서 있다. 46도의 팰럿은 시트러스와 후추, 바닷물과 사과즙 정도로 단순하지만 그 정밀함이 오히려 인상적이다. 피니시는 길지 않아도 감초와 민트, 재와 레몬의 윤곽이 또렷이 깃들어 있다.

the house style when there’s no sherry. Direct, slightly fermentary, with raw wool, modelling clay, damp chalk, and slate… You get the idea—it’s rather mineral, simple, almost youthful, yet to me, of an almost Caravaggesque beauty. Nothing is missing, and nothing is superfluous
restaurant Palate
citrus and pepper, plus seawater and apple juice. That’s it—it’s little, and it’s a lot. A new kind of old Springbank—abstract, simple, magnificent. Isn’t complexity overrated in whisky? (Of course not—pure b*ll*cks.)
