잔을 가볍게 흔들면 스트라스아일라 40년의 짙은 마호가니 빛이 잔 벽을 따라 천천히 미끄러진다. 코끝에 가져가면 퍼스트필과 리필 셰리 캐스크가 빚어낸 잘 익은 무화과와 가죽, 흑설탕 향이 차례로 다가온다. 한 모금을 머금으면 43도의 섬세한 단맛이 입천장을 가볍게 적시며 다크 베리와 시나몬, 옅은 백단을 풀어놓는다. 삼키면 스코틀랜드 최고령 증류소 잔향이 길게 머문다.

this starts well, very well. Superlative golden raisins and kougelhopf plus fudge and toffee (a whole pack) for a start, then a progressive shift towards pine needles, pinesap, menthol, cough syrup and assorted elements. It can happen that these kinds of developments in very old whisky become a little off-putting, but that's certainly not the case here, quite the opposite. Unless you just hate cough syrup!
restaurant Palate
sure the oak bites a bit, with a very gingery and peppery arrival plus something drying, around strong black tea... But when the liquorice kicks in, together with many burnt dried fruits (the kougelhopf had been forgotten in the oven), everything gets better. Heavy pinesap, though
