air Nose
a beautiful start on Chinese plum sauce (the one they serve with Peking duck), balsam, scented wax, pinewood, resin. How special! Some crystallised kumquats, bitter oranges, Jägermeister liquor and quite some smoke. A terrific nose. Notes of smoked ham, caramel syrup, fresh mastic. Very, very rich and complex, switching to soy sauce and Maggi after a while
restaurant Palate
very creamy and very phenolic, with some bold notes of resin, raw propolis, pine liquor, eucalyptus candies, dried herbs and orange zests. Add to that a very nice bitterness and quite some cocoa powder, strong caramel, thyme and rosemary, lavender candies. Just superb, not tired at all but rather tannic and drying, that is. Nothing excessive, though. In short, a stupendous aged Strathisla! 92 points . Strathisla 39 yo 1965/2004 (46%, Gordon & MacPhail)
