잔을 흔들어 향을 열어도 이 위스키는 한동안 말이 없다. 코를 가까이 대면 사탕 같은 옅은 단맛과 풀, 생보리 정도만 겨우 잡힌다. 물을 몇 방울 더하면 그제야 신 사과와 사이다, 그을음이 깨어난다. 한 모금을 머금으면 처음엔 달다가 곧 쌉쌀한 오렌지와 토닉워터의 씁쓸함이 자리를 차지하고 56.9도의 기운이 뒤를 민다. 물을 섞어 삼키면 후추 뿌린 마멀레이드와 소금기가 살아나고 새콤한 여운이 길게 이어진다.
