노즈에서는 21년의 시간을 거친 아일 오브 주라가 셰리 캐스크에서 도달한 잘 익은 자두, 옅은 호두, 짭조름한 미네랄의 향이 가장 먼저 두드러진다. 팰럿은 54.9도의 캐스크 스트렝스에서 아일 오브 주라 특유의 짠 캐릭터와 셰리의 마른 단맛이 균형 있게 발전한다. 잎담배의 비터와 옅은 후추의 스파이스가 명확하게 드러나며 구조감이 단단하게 잡혀 있다. 디스틸러리의 스틸맨스 드램이 잡아낸 아일 오브 주라의 응축된 시간이 또렷이 깃들어 있다. 피니시는 매우 길고 묵직하게 이어진다.

grainy and caramelly, on cornflakes, butter, liquorice, vanilla, custard, fudge, heather… Very natural, with a nice balance
restaurant Palate
sweet and very caramelly, with lots of vanilla and grain. Not much else, I’m afraid, but a long, powerful, liquoricy and again very salty finish. Rawer than the 1985. 80 points .
